Ingredients
- 2 large chicken breasts (or 3 cups cooked rotisserie chicken)
- 12 lasagna noodles (regular or no-boil)
- 3 cups Alfredo sauce (store-bought or homemade)
- 2 cups ricotta cheese
- 3 cups shredded mozzarella cheese
- 1/2 cup grated parmesan cheese
- 1 tablespoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 2 tablespoons olive oil (for cooking chicken)
- Fresh basil or parsley (for garnish, optional)
Instructions
Cook the Chicken: Season the chicken breasts with salt, pepper, and garlic powder. Heat olive oil in a skillet over medium heat and cook the chicken for about 6-7 minutes on each side, or until fully cooked. Shred the chicken into small pieces once cooled.
Prepare the Alfredo Sauce: In a saucepan, melt butter and sauté minced garlic until fragrant. Pour in the heavy cream and bring to a simmer. Stir in parmesan cheese and let the sauce thicken, about 5-7 minutes. Season with salt and pepper to taste.
Boil the Lasagna Noodles: Cook the lasagna noodles according to package instructions. Drain well and set aside. If using no-boil noodles, skip this step.
Combine Chicken and Sauce: Mix the shredded chicken with half of the Alfredo sauce to coat it evenly.
Layer the Lasagna: In a baking dish, spread a thin layer of Alfredo sauce. Place a layer of lasagna noodles, followed by a layer of the chicken mixture, ricotta cheese, and mozzarella. Repeat the layers, finishing with a top layer of cheese.
Bake: Cover the dish with aluminum foil and bake at 350°F for 30 minutes. Remove the foil and bake for an additional 10-15 minutes to allow the top to brown and become bubbly.
Serve: Let the lasagna cool for a few minutes before serving. Garnish with fresh basil or parsley if desired.
Notes
- You can substitute chicken with turkey or mushrooms for a vegetarian version.
- Use store-bought Alfredo sauce for a quicker option, or make your own for a richer flavor.
- To save time, consider using rotisserie chicken instead of cooking fresh chicken.
- If you prefer a spicy twist, add some red pepper flakes to the Alfredo sauce.
- This dish can be made ahead of time and stored in the fridge overnight, then baked the next day.
