Ingredients

– 1 lb lean ground beef
– 2 large tomatoes (beefsteak or heirloom)
– ½ cup shredded mozzarella cheese
– 1 tbsp fresh basil, chopped
– 1 tsp lemon zest
– ¼ cup breadcrumbs (optional, use gluten-free if needed)
– Salt and pepper, to taste


Instructions

1. Prepare the Tomatoes: Cut off the tops of the tomatoes and scoop out the seeds and pulp using a spoon. Sprinkle with salt and let them drain upside down on a paper towel for 10 minutes.
2. Cook the Filling: In a skillet, cook the ground beef over medium heat until browned. Drain excess fat, then add the mozzarella, basil, lemon zest, breadcrumbs, salt, and pepper. Stir until combined and the cheese melts.
3. Stuff the Tomatoes: Preheat the oven to 375°F (190°C). Pat the tomatoes dry, fill them with the beef mixture, and place in a baking dish.
4. Bake: Bake for 15–20 minutes or until the tomatoes are tender. Broil for an additional 2–3 minutes for a golden top. Serve hot!
