  • 2 lbs bone-in, skin-on chicken thighs and drumsticks
  • 2 tbsp vegetable oil or butter
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tbsp Hungarian sweet paprika
  • 1 tbsp tomato paste or 1 medium tomato, diced
  • 2 cups chicken broth
  • 1 cup sour cream
  • 1 tbsp all-purpose flour (optional, for thickening)
  • Salt and black pepper to taste
  • Fresh parsley for garnish
  • Egg noodles or rice for serving

Instructions

Step 1: Sauté the Onions

  • Heat oil in a large pan over medium heat.
  • Add chopped onions and cook until soft and golden, about 5-7 minutes.

Step 2: Add Paprika & Garlic

  • Remove the pan from heat and stir in Hungarian sweet paprika to prevent burning.
  • Add minced garlic and stir for about 30 seconds until fragrant.

Step 3: Cook the Chicken

  • Season chicken pieces with salt and pepper and add them to the pan.
  • Brown on all sides for about 5 minutes per side.

Step 4: Simmer with Tomatoes & Broth

  • Stir in diced tomatoes or tomato paste and pour in chicken broth.
  • Cover and simmer for 30-40 minutes until the chicken is tender.

Step 5: Finish with Sour Cream

  • Remove about ½ cup of the sauce and mix it with sour cream in a bowl.
  • Stir the mixture back into the pan and simmer for another 5 minutes.

Notes

  • For a lighter version, substitute sour cream with Greek yogurt.
  • Smoked paprika can be used for a deeper, smokier flavor.
  • Serve with buttered egg noodles, rice, or mashed potatoes for a complete meal.
  • Store leftovers in an airtight container in the fridge for up to 3 days.
